Sassy’s Smoothie Bowls

I am not much a breakfast fan. I am a diehard brunch fan, well because I LOVE DAY DRINKING! While pancakes, french toast, and eggs benedicts are all delicious, they don’t get me jumping out of bed in the morning. Arepas and huevos pericos may be the exception to that rule but if Madre made that every morning, I would undoubtedly be 1,000 lbs. I am happy to make a Bulletproof coffee and fast the morning away for a tasty lunch! Madre, on the other hand, MUST have breakfast. She loves yogurt and granola, so my solution to a hearty breakfast option is a smoothie bowl. She also has a sensitive tummy, so this is the perfect way to distract her into a dairy-free breakfast.

Smoothie Bowls

I have always had a hard time finding smoothies that I like because the typical menu always includes bananas (ick!). I also cannot justify paying someone to make me a smoothie or avocado toast. There is a Buzzfeed recipe that started it all. Thankfully, Jamba Juice offers pre-made smoothie packets in the freezer section for a semi-homemade DIY version. Mixed that with a Triple Berry Blend of frozen fruit into a NutriBullet to make the base of a tasty smoothie bowl and top with a fun blend of textures.

Smoothie Bowl Base:

1/3  Jamba Juice Caribbean Passion smoothie kit

1 cup  Wellsley Farms Organic Triple Berry Blend (at BJ’s)

1 scoop Vital Proteins Collagen Peptides

1 scoop PlantFusion Unflavored Protein Powder

1/2 cup So Delicious Coconut Milk Yogurt

1 tbsp Onnit MCT Oil

1 tbsp Creamy Almond Butter

1 splash Ripple Pea Protein Milk Unsweetened

Instructions:

Defrost the frozen fruit overnight in the fridge or microwave for 2 minutes. Combine all ingredients in a large NutriBullet cup. Blend in the NutriBullet and pour into a bowl to top and serve.

Toppings:

The topping of your bowl is where your creativity can shine! I always include coconut flakes (unsweetened, if possible), chia seeds and a final drizzle of honey. For crunch, I love using Early Bird Food Granola and Madre is a fan of Swiss Müesli. Be sure to top your bowl with some fresh fruit! Defrost extra berries, throw in a banana, or slice a kiwi for extra color. For different textures, try adding slivered almonds or hemp seeds to the mix and DIG IN.
