There is a local watering hole in Delray Beach that has an awesome margarita menu. I almost always lean towards a passion fruit flavor, but El Camino’s watermelon jalapeño margaritas are so tasty. Last week the mood struck me to try making them at home. Today’s National Watermelon Day, so what better than to share the recipe because, I nailed it.
I went to Trader Joe’s and picked up all of the fresh ingredients: a seedless watermelon, jalapeños, and limes. When I was researching recipes, I realized that I needed a mesh strainer and quickly added to my Amazon cart. I already had the bar basics: simple syrup, tequila, and Cointreau. Let’s get to making it!
Ingredients
- 1/2 watermelon, diced
- 1 cup frozen limeade concentrate
- 3 tablespoons simple syrup
- 1 jalapeño, diced (with seeds) + extra for garnishing
- 1 cup silver agave tequila (or more, if you prefer!)
- 1/2 cup of Cointreau
- lime slices, for garnish
- Blend watermelon in a high speed blender and strain through a mesh strainer into a glass pitcher.
- Then blend together the limeade concentrate, simple syrup and jalapeño, and strain once again through a mesh strainer.
- Stir in the lime mixture into the glass pitcher with the watermelon juice and add tequila. Mix it all to combine.
- Serve over ice and garnish with fresh lime and jalapeños.
There are many variations to this recipe, you could use Tanteo jalapeño tequila, spicy salt to rim the glass, and a cup of fresh lime juice. Whichever variation you choose, be sure to pair these margaritas with some tasty fajitas (recipe HERE).
